Buffalo Cauliflower
One of my favorite go to "spiced up" veggies is buffalo cauliflower. To me, cauliflower is kind of boring. But the nice thing about it is that it's very versatile and can be manipulated to resemble other foods that aren't on my path to health and wellness.
I have missed chicken wings. I miss the sauce, I miss the spice, I miss going to B-dubs. However, I can still replicate this experience at home with my buffalo cauliflower as I watch the game on MLB TV. Some people may not be convinced, and that's ok. This works for me. I enjoy this recipe and make it often. You can add it to salad, you can serve it as a side dish, or it could be the main entrée.

Here are the details:
Ingredients:
- Some cauliflower florets
- Frank's Red Hot or Frank's Buffalo - either one is great!
- 1 tsp olive oil (not necessary, but some people like the creaminess it adds to the sauce)
Steps:
- Preheat your oven to 450°
- Line a baking pan with foil (makes cleanup easier)
- Spread the cauliflower florets evenly on the baking pan

4. Bake for 10 minutes
5. Turn the cauliflower florets over
6. Bake for 5 more minutes
- If you want to add the oil to the hot sauce, now is the time. Add 1 tsp of olive oil to about 1/2 cup of hot sauce in a separate bowl.
7. Remove cauliflower from oven
8. Spread the hot sauce on the cauliflower using a brush, dipping it in the bowl, or just dumping it on the cauliflower. Whatever works for you!
