Spicy Shrimp and Vegetables

Dustin has been craving shrimp. He likes shrimp and he likes a little heat. He wanted a lot of both, but wanted to stay on the Profile plan. We also wanted to add a vegetable to the side and came up with the idea to make lemon pepper broccoli. Here is the deliciousness that transpired from his creativity and his craving!

Now, of course you are thinking that this looks amazing. Well, you would be right. It was phenomenal!

Here's how we created this...

Profile Approved Spicy Shrimp and Vegetables

Ingredients:

  • 5 oz frozen cooked shrimp (deveined and tails off for ease)
  • 1 zucchini, sliced and quartered
  • Mushrooms, as many as you want
  • 1 cup spinach
  • 1 serving Profile Spaghetti Noodles (these are the consistency of an Asian stir fry noodle)
  • 2 tbsp. Chili Garlic Sauce
  • 1 tsp. Olive oil

This stuff is a great way to spice up a bland dish.


Broccoli side dish ingredients:

  • Broccoli, as much as you want
  • Lemon Pepper seasoning mix
  • Lemon juice

These two make a great team!

Steps:

  1. Put the broccoli with a small amount of water in a large pan.
  2. Sprinkle lemon pepper seasoning liberally on the broccoli.
  3. Squeeze a squirt of lemon juice into the pan.
  4. Cover and heat on medium heat until cooked (cook less for more steamed, crisp broccoli).
  5. Once broccoli is complete, place to the side but cover to keep warm.
  6. In another pan, while the broccoli cooks, sauté the zucchini and mushrooms in a little bit of water.
  7. When the zucchini and mushrooms are done (3-4 minutes), put in a bowl off to the side and cover to keep warm.
  8. Start heating the shrimp in the same pan you just used for the zucchini and mushrooms.
  9. Once the shrimp is pink and the water is boiling (from the ice), drain.
  10. Add the chili garlic sauce to the shrimp and cook for 1-2 minutes.
  11. Place the shrimp on a plate to the side. 
  12. Add 1 tsp. olive oil, Profile Spaghetti Noodles, zucchini, and mushrooms to the pan.
  13. Sauté for 1-2 minutes until well blended.
  14. Add the spinach and cook until wilted, stirring frequently.
  15. Once the spinach is wilted, add the shrimp and transfer to a plate for serving.
  16. Add the broccoli to the side.
