Dustin has been craving shrimp. He likes shrimp and he likes a little heat. He wanted a lot of both, but wanted to stay on the Profile plan. We also wanted to add a vegetable to the side and came up with the idea to make lemon pepper broccoli. Here is the deliciousness that transpired from his creativity and his craving! Buffalo Cauliflower

One of my favorite go to "spiced up" veggies is buffalo cauliflower. To me, cauliflower is kind of boring. But the nice thing about it is that it's very versatile and can be manipulated to resemble other foods that aren't on my path to health and wellness. But no, seriously, they are good!  It is not a trap as Admiral Ackbar is trying to warn you.  It's just a slight trick. I have missed chicken wings. I miss the sauce, I miss the spice, I miss going to B-dubs. However, I can still replicate this experience at home with my buffalo cauliflower as I watch the game on MLB TV. Some people may not be convinced, and that's ok. This works for me. I enjoy this recipe and make it often. You can add it to salad, you can serve it as a side dish, or it could be the main entrée. Buffalo cauliflower is healthy AND delicious! Here are the details:

Officially Part of the 100 Club

MY WEIGHT IS 199.7!!!!!!!!!!!! Ok, I am a little excited. Seeing that 1 at the front of my weight is definitely a huge motivator for me. I feel like I hit a major milestone today. 😃 Weight today: 199.7 lbs. Total weight loss: 9.1 lbs.

I lost 0.9 lbs!

Ok, so yesterday I was venting because I was stuck in the 201 club for 5 days... well, I weighed in this morning and I lost 0.9 lbs! This is a process... It will take time... I am seeing results... Weight today: 200.4 Total weight loss: 8.4 lbs

The Most Frustrating Week

I may be in the middle of the most frustrating week ever. I have been stuck in "201" land for 5 days now. I would like to see a 1 instead of a 2 as the first number. At least I'm losing, right?  There is a downward trend, but it is slow. Yesterday was rough. Dustin is starting to get motivated to exercise more, and I am just not there. He asked me to do some exercises with him, and I did not feel like I could. I felt like my physical limitations were holding me back and I started crying. I cried because I was disgusted with myself and I cried because I was disappointed in myself. I eventually ended up with a headache and took a nap. Dustin was super supportive and listened to my venting and we talked about my feelings and why this was so frustrating for me. Today, I decided to try something that was a little more me. I walked for 30 minutes and it was a very brisk pace! I did some stretching as well. I need to remember that what works for him, won't necessar...

Weekend update - Birthday Party Blues and Flying

One of the biggest fears I have had coming into this health and wellness journey is the social aspect - everything revolves around food! Of course, I had a birthday party for some family members this past weekend. Dustin has left town, so I am navigating this alone (and I have to remember that he is too!). I had a flight scheduled to be with him on Monday night, so I had this weird birthday party/travel combo looming that really had me worried! I stuck by my motto of planning and preparation though, and I was able to successfully navigate this. However, it wasn't without its own set of drama. Let me recap...

One week down - Time for a Coach Meeting

Met with our Profile coach today. It's been a little less than a week and we inundated him with questions. I will go through some of those in this post and share what we have learned. My weight has stayed the same as it was yesterday, so that's frustrating. The coach says that he reviewed our progress (remember, all that scale data is synced back into our Profile account) and that we are doing well! The first couple of weeks will show the biggest losses, and then we can expect to see 1-3 lbs. per week depending on how active we are and how well we stick to the plan.
