Found Our Groove with the Food, Then Had a Day with Minimal Loss
Dustin and I have really food a good groove with the food on this plan. We have discovered that the foods we are eating aren't too bad at all, and meal planning has been a blast!
One of our new favorite meals is a spinach salad with sautéed onions and mushrooms (sautéed in water - no oil!), 1/ 4 cup of salsa, and 1/4 cup of guacamole. It is so tasty! Having salsa as a flex food is awesome because it really adds a lot of flavor to otherwise bland meals.
The recommended vegetable intake per meal says a minimum of 2 cups of vegetables, but we are eating more than that. We might eat up to 5 or 6 cups of vegetables in a meal! We will randomly throw broccoli or cauliflower into whatever we cook up just to add texture and more veggies.
Today, the plan is to cook up some Buffalo cauliflower. I will let you know how it goes. Cooking with vegetables is fun and we are discovering a lot of things we didn't even know we would like.
Last night, we celebrated my son's 13th birthday with a homecooked meal. I invited some family over and we made my son's favorite meal of spaghetti. Dustin and I avoided the pasta and had baked chicken breasts with a ton of veggies. Even though everyone came over for the pasta, I think they were a little bit envious of our meals. They looked amazing!
After dinner, we had cupcakes for anyone that wanted them. No pressure. Dustin and I abstained and watched the kids and grandparents enjoy themselves.
So, even after that successful evening, I still showed minimal weight loss this morning (0.2 lbs from yesterday). Dustin showed no loss this morning either, so we are both a little bit frustrated. I have to remember that this is a journey and it took time to put the weight on and it will take time to get it off too.
Maybe I am eating too many vegetables? I will make a note to ask my coach. Is vegetable bloat a thing?
